Cadbury Cream Egg Cupcakes

I found this recipe on Pinterest the night before Easter and I had to try it. Normally I make my cakes and cupcakes by scratch, but in a pinch I used a Pillsbury Super Moist Chocolate Cake mix and cream cheese frosting. What you need:
Cadbury Cream Egg Cupcakes



  • 1 Box Chocolate Cake Mix
  • 1 Can Frosting (I used Cream Cheese, but Vanilla would work. I will post a good frosting recipe this week if you prefer by scratch)
  • Yellow food coloring
  • 48 Cadbury Mini Cream Eggs (24 frozen)
Heat the oven to 350. Line the cupcake pan with liners. Prepare cake mix as directed. Put one frozen egg in each cup. Carefully cover with mix. Bake for 18-20 minutes. Remove. Let Cool. Separate around 1 cup of the frosting. Put in several drops of food coloring. When cupcakes are cool, frost first with the regular cream cheese frosting. Then put a dollop of yellow on top. Place a Cadbury Mini Cream Egg (not frozen) on the dollop of yellow frosting. Enjoy!! These were very popular at Easter.
